1 Red Bell Pepper
4 Streaks Of Parma Ham
5 Spring Onion Stalks, Chopped
1 Tomato, Chopped
5 Medium Eggs
1 Large Handful Spinach
1/2 Tsp Salt & Pepper
1 Tsp Chives



Pre Heat The Oven To 200c.

Chop Up The Pepper, Spring Onion, Spinach And Tomatoes And Add To A Mixing Bowl. Crack The Eggs And Add To The Same Bowl And Mix Well.

Add 4 Muffin Cases To A Muffin Tray Or Use A Non-Stick Muffin Tray. Wrap Each Slice Of Parma Ham Around The Inner Edge Of The Tin Or Muffin Case.

Evenly Pour The Mixture Into The 4 Moulds, Reduce The Oven Temperature To 180c And Bake For 15-20 Minutes Or Until The Tops Are Firm To Touch.

Leave To Cool And Either Consume Immediately As 2 Egg Muffins Being 1 Serving, Or Store In The Fridge In An Airtight Container For Up To 3 Days.

Tip: For A Spicy Kick, Sprinkle Chilli Flakes On Top!
